bulked up spaghetti sauce

Last night we had a staff and family dinner all together - a combined 15 people.  I brought the spaghetti sauce and it turned out awesome.  It was loaded with veggies and really flavorful - I was really happy with it!  Unfortunately, I don't have a picture of it.  Leftovers are in the fridge at home, but I'm in the office.  So here's the recipe, sans picture.  Trust me, it's delicious!

7 Veggie Spaghetti Sauce (serves 8)
1 small zucchini, chopped
1-2 carrots, chopped
1 green pepper, chopped
1 onion, chopped
3-4 cloves garlic, pressed
1 box chopped spinach
1 box chopped broccoli
1 28oz. can tomato sauce
1 28oz. can tomato puree
1 can tomato paste
1 can no-salt diced tomatoes
2T.+ italian seasoning
salt and sugar to taste
Saute zuc, carrots, and green pepper together in olive oil until a little soft.  Add in onion and garlic and continue to saute until all veggies are tender.  Add in remaining ingredients except salt and sugar.  Stir together and heat through on medium heat.  Season with sugar, salt, and additional italian seasonings until perfect!  (Add sugar a little at a time until the acidity of the tomatoes is more balanced.)

Enjoy... and be proud of all the veggies you're getting in one sitting!

  1. How funny, I was JUST thinking this morning (literally two hours ago) that I needed to look up a veggie-filled sauce recipe! Where'd you get this one? Thanks and it sounds yummy!
