Coffee Chocolate Chip Muffins (modified from here)
2 c. whole wheat flour
1/3 c. sugar
2 1/2 t. baking powder
3 t. instant coffee
1/2 t. salt
1 t. cinnamon
1 c. skim milk
1/2 c. applesauce
1 egg
1 t. vanilla
3/4 c. chocolate chips
Mix dry ingredients. Mix in wet. Bake at 375 for 15ish minutes.
Because I cut the sugar down so much these aren't super sweet - more muffin than cupcake. But it's not a bad thing! The chocolate still makes them plenty sweet and they have a great texture and lightness. The coffee flavor is very subtle (in fact, next time I would like it to be stronger!).
I just spent some time playing with Mosie and she is sadly out of shape since her surgery and recovery period. We've got to get her back to her old athletic self!
