My first foray into tempeh went swimmingly!
First I crumbled the tempeh, then covered it with water, a bunch of garlic, 2t. cumin, and 1/2t. salt. I let it simmer until all the water was dissolved.
Once it dissolved I added in black beans (about 2 1/2c.) and some frozen corn and a little olive oil, then heated it all through. I added a little more salt to taste. Once it was hot we piled it on tortillas with spinach and salsa!
Yeah, it was crazy delicious. Definitely going to be cooking with tempeh more in the future!
(You may be asking "what is tempeh?" Answer: soy beans and rice pressed together. It has an almost meat-like texture and it tends to take on the flavor of what you cook it in - hence simmering it in spices and salt and garlic.)
