Here's another easy and simple recipe. We had this last week - our first time using some of the fresh oregano from our garden!
Tomato Oregano Pasta
2c. whole wheat pasta
3 cloves garlic, chopped
1-2 large tomatoes, chopped
1/4c. loose packed oregano leaves
2T. olive oil
1/2t. salt
Cook whole wheat pasta until desired tenderness. Saute tomatoes, oregano, garlic, and salt in olive oil over medium high heat, about 5 minutes. (It might seem like a lot of olive oil, but you want more to coat the pasta when you toss it together.) Drain pasta and return to pot. Pour tomato mixture over pasta and toss well to coat evenly.
Fast and delicious and end-of-summery!
