When I got home, I made some delicious peanut butter granola which turned out almost-but-not-quite-as-good-as-my-mom's. Which I anticipated being the case, since her food is always completely amazing. Still, Dave was pleased.
And immediately started munching.
Mom's Peanut Butter Granola
3c. oatmeal (quick or old fashioned. or some of both)1/2c. dry roasted peanuts
1/2c. unsweetened cocunut
3T. sesame seeds
Mix all above in a large bowl.
1/2c. creamy peanut butter
1/2c. packed brown sugar
1/4c. butter
1T. light corn syrup
1/4t. salt
Stir above together over medium heat about 3 min. or until smooth. Pour over oat mixture and stir until well blended. Line a jelly roll pan with aluminum foil and grease lightly. Spread oat mixture evenly in pan. Bake 350 degrees for 10 min. Stir. Bake 10 more min. until lightly golden. Lift foil with oats from pan and cool before storing. Makes 6c.

In all the run around I didn't have time to run today... which fits in the amended marathon schedule, but made me feel antsy since my last run was Wednesday. Not sure when my long run for the weekend will happen - I'm out for the whole day tomorrow... maybe Sunday afternoon?
But on to better things... like date night tonight! I have visions of popcorn and banana soft serve ice cream and lots of time with my loves!
